We often like to have a salad accompany are lighter meals and we stumbled across this one from smitten kitchen the other day. It is so simple and easy to change the flavor depending on what you are serving it with. With only a handful of ingredients the simple flavors are highlighted. We chose to add native bay shrimp to ours which can elevate it to more of a main dish.” – Our Portland Kitchen
